#4. Momos (Dumplings)

I am back with my blog and this time as hinted in my last blog, an interesting well known snack. Sorry for the delay guys as you all know November is the month of festivals and I was busy too in the celebrations.

So you all know I was introducing you the recipe of a very much liked snack, momos or in sikkim language known as dumplings. Momos, who doesn't love momos? These are steamed buns with filling. It typically consists of two parts- the cover and the filling. The cover is made of dough of white flour and water. Sometimes yeast or baking soda is also added to the dough to enhance the texture of the momos.

Originally these momos were made with ground meat fillings, but over the years a lot of modifications have been made that have made dumplings even better. From Tofu (Paneer) to cheese, everything can be included in the filling.

 This is literally home made. This time before eating I first clicked a picture so that you guys can believe me.

So without wasting more time. The required ingredients are:

Ingredients for Dough-

  • 3/4 cup Flour (Maida/ Rawa)
  • 1 teaspoon oil
  • Salt to taste
Ingredients for Stuffing-
  • 1 tablespoon oil
  • 3-4 cloves of Garlic, finely chopped
  • 1 teaspoon finely chopped Ginger
  • 1/2 cup finely chopped Carrot
  • 1/2 cup finely chopped Cabbage
  • 1/4 cup finely chopped Capsicum
  • 1/4 cup finely chopped Green French Beans
  • 1/4 cup finely chopped Green Onion or Onion
  • 1 teaspoon Soy Sauce
  • 1 teaspoon Chilli Sauce
  • 1/2 teaspoon Black Pepper Powder
  • Salt to taste
Recipe:
  1. Finely chop all vegetables as mentioned in the ingredients section.
  2. Add 3/4 cup flour, 1 teaspoon oil and salt in a large bowl.
  3. Mix all ingredients well and prepare a soft pliable dough by adding water as needed. Cover the dough and keep it aside for 20-25 minutes.
  4. Heat 1 tablespoon oil in a pan over medium flame. Add finely chopped ginger and garlic and sautΓ© for 30 seconds. Add green onion and sautΓ© for a minute.
  5. Add all chopped veggies. Mix well and sautΓ© them for 4-5 minutes. Add 1 teaspoon Chilli and Soy sauce.
  6. Add 1/2 teaspoon black pepper powder.
  7. Mix well and sautΓ© for a minute. Turn off the flame. Stuffing for veg momos is ready.
  8. Knead the dough again for a minute and divide it into 2-equal portions. Give each portion a round cylindrical shape like cucumber. Cut each one into 6-7 equal portions with knife as shown in the photo.
  9. Give each small portion a round shape like ball and flatten it a little into Pattie by pressing it in between your palms. Cover them with a wet clotg or a plate to prevent them from drying.
  10. Place one dough Pattie on a rolling board and roll it out into a thin disc. Roll it from sides and keep the center portion little thick compared to sides. If required, sprinkle some dry flour while rolling.
  11. Place approx. 1 tablespoon filling in the centre. Don't over-stuff it, otherwise it will be difficult to get a proper "potli" shape.
  12. Lift the edge from one side and start pleating. Join them in the centre to seal it. Prepare more from remaining dough in a similar way.
  13. Grease a steamer plate or any other plate with oil to prevent them sticking. You can also line a plate with cabbage leaf instead of greasing the surface with oil.
  14. Heat 1 to 2 glass of water in a steamer or a deep vessel over medium flame.
  15. Place stand in the steamer and place momos plate over it. Momos should not touch the water. Cover the steamer/vessel with a lid and steam them for 6 to 7 minutes over medium flame or until they look little translucent and shiny. Remove the lid and check them by touching it. If they don't feel sticky then it means they are cooked.
  16. Transfer them to a serving plate. Serve hot Veg Momos with Momos Chutney.
Don't worry guys Momos Chutney recipe is same as tomato achar recipe which I had briefed you about in my last blog. So please give it a try and don't panic while making it as the recipe looks long but it is very easy believe me.
