#5. Gundruk

Guys, here's another luscious dish lined up. This one's literally one of the most delectable of all. So, the name of the dish is Gundruk. It is a fermented leafy green vegetable. Though the name is a bit unnatural, the dish is totally obverse. It is also known to be one of the staple foods of Sikkim. Besides being so delicious, it is also very healthy and as is the fact, it is made in earthen pots traditionally since ages. You all will have to try this one and I am damn sure, you won't stop licking your fingers๐.
Gundruk is a food of Nepalese origin. Properly made Gundruk is only found in villages that people make in their households. It is rich in roughage and helps in maintaining the metabolism of the body. This is one of the dish that has remained the same even after ages and seem to show little alteration.
So, the required ingredients are:
- 1 handful gundruk
- 1/2 cup Soyabeans, black
- 1 medium size Onion
- 3 clove Garlic
- 1 Ginger, small
- 3 Tomatoes, medium size
- 1/2 teaspoon Cumin powder
- 1/2 teaspoon Coriander powder
- 1/4 teaspoon Turmeric powder
- 2 Green chillies, chopped
- 1/2 teaspoon Fenugreek seed
- 1/2 teaspoon Mustard seed
- Fresh coriander leaves
- 2 teaspoons lemon juice
- Mustard oil
- Salt
- Oil roast soybeans for 4-5 minutes till they crack. Keep aside.
- Sautรฉ gundruk in little oil for 2 minutes. Keep aside.
- Heat oil. Splutter mustard seeds, fenugreek, onions, garlic and chillied till onions are light brown.
- Add chopped tomatoes, turmeric powder, salt, cumin and coriander powder. Add cup of water and cook till gravy consistency.
- Add 2-3 cups of water. Bring to boil. Add gundruk and simmer for 10 minutes.
- Add Soyabeans, lemon juice and garnish with coriander leaves.
- Serve Gundruk ko jhol along with rice.
